Pizza, got to have pizza!!

So, does a low-carb lifestyle mean I have to give up Friday evening pizza with the kids? No, luckely it does not :)

The problem with "normal" pizza is the crust and I have tried different approaches before I finally found one that works for me. This recipe for a low-carb pizza I actually like a lot. The crust is based on cauliflower, strange I know, but it works.


Ingredients crust:
  • 100g cooked, riced cauliflower See here
  • 1 egg
  • 100g shredded cheese
  • 1 tsp oregano
  • other spices to taste
The original recipe uses mozzarella cheese, I did not have mozzarella so I used shredded Norvegia (good old Norwegian cheese).
  1. Preheat oven to 225 degree C
  2. Whisk the egg and add cold riced cauliflower, shredded cheese and spices.
  3. Spoon the mix onto a baking tray
  4. Bake for 15 minutes until golden
  5. Add topping(see below) and bake to finish
Topping:
For topping I make my own tomato sauce:
  • 1 fresh tomato
  • 2 sun-dried tomatoes
  • quarter red onion
  • I clove of garlic
  • Tabasco to your liking
Use a blender to mix all ingredients and spoon onto the golden crust. Add any other topping, for example 200g minced pork beef, 20g jalapeño peppers, and 20g olives. Finish of with 75g shredded cheese on top.

Put the pizza back into the oven and bake until cheese is golden.
