Thought I would share a simple cod recipe that has become the most used fish dish at home.
2. Peel the red onion and cut into 8 wedges.
3. Peal and cut the carrots lengthways then slice into 6cm chunks.
4. Half the potatoes, and put all the vegetables in a roasting tray.
5. Scatter over the vegetables with a good pinch of salt, pepper and dried chili spice.
6. Drissle with a bit oil and toss the vegetables to cover in spices and oil
7. Roast in oven at 225C for 60 minutes.
8. Take the vegetables out of the oven and let them rest while pan frying the cod filets and serve :)
Ingredients for two portions:
- Cod filet, 400g
- 1 red onion
- 2 carrots
- 10 Amandine potatoes
- Sunflower (or other) oil
