Karin's low-carb bread

Freshly baked bread made this afternoon.

My wife and I have been looking for a low-carb bread and finally we found one we really liked:

I decided to share the recipe here and send a big thank you to Karin for sharing her recipe for a fantastic bread :)

Wet ingredients:
  • 300g cottage cheese
  • 5 eggs
  • 1/2 dl oil
Blitz the ingredients using a hand held blender and make sure the cottage cheese is mix well with the eggs.

Dry ingredients:

Here is the interesting part. Adding the dry ingredients keeping the carbs at a minimum:
  • 3 ts Baking soda (bakepulver)
  • 3 ts Splenda (or other sugar replacement)
  • 2 ts Salt ( I prefer Maldon salt)
  • 2 ts Psyllium husk fiber (Fiber husk)
  • 2 ts Locust bean gum (Johannesbrødkjernemel)
  • 60g Rye flour (Kruskakli)
  • 4 tbs Vital Wheat Gluten (Glutenmel)
  • Handful flax-seeds (Linfrø)
  • 75g Walnuts (Valnøtter)
  • 40g Sunflower seeds (Solsikke frø)
Mix all the dry ingredients together and then add it all to the cottage cheese and egg mix. We use the Kenwood kitchen machine to mix it all together.

After mixing let the dough rest for 10 minutes in order to let the Psyllium husk fiber (Fiber husk) start binding everything together. While the dough rests cover the inside of the bread pan with wax-paper (bakepapir).

It is very important to follow the below instructions on how to bake the bread in order to make sure the bread gets a nice crust.
  • Put the bread into preheated oven at 180 C and bake for 25 minutes
  • Turn the heat down to 150 C and bake for 40 minutes
  • Take the bread out of the bread pan, remove the wax paper (bakepapir), and put the bread back in the oven at 180 C for another 15-20 minutes.
This bread really feels like bread and not like cake as some recipes we have tried before. For taste we like to top the bread with sesame seeds and Maldon salt.

We usually get about 25 slices from this bread. And with the ingredients we are using (the Norwegian once) I get the following nutrition for each slice:
