Ingredients (two portions):
2 tbs butter
200g fresh spinach
4 cloves garlic
1-2 red onion
4 dl water
1.5 dl double cream
Maldon Salt
Ground black pepper
Cheyenne pepper
Ground dried chilli
Instructions:
Finely chop garlic and red onion. In a deep pan melt butter and then add garlic and red onion and stir fry until golden.
Add spices (as much as you prefer, I like mine spicy) and spinach and stir it around to mix it with the garlic and red onion. Add water and double cream and let it boil for 5-10 minutes. Once boiled I like to use a hand held mixer to mix the soup nice and smooth.
Serves hot but can also easy be made in the morning and reheated for lunch.
Sometimes I like to serve this over a hard boiled egg.
